Instant crispy chakli

We all know chakli is one of best go to snack in south Indian families and also one of the most important naivedya(food offered to God during pooja) for Varamahalakshmi and Ganesha Chaturthi festivals .

Our great grandmothers and grandmothers have successfully passed on their cooking wisdom to the next lucky person in their families. My mother is one among the luckiest and she is trying her best to pass on her knowledge to her daughter in law and daughter.

And here I am carrying out that legacy and passing on the same to you , I mean to all my blog readers πŸ˜€.  Am I not ? πŸ˜‰ 

See here I am showing off my brass chakli maker which I stole from my MIL'S place  just to make videos and write blogs😁.



Okay jokes apart, lets see how to make instant crispy chakli at home.




There are 100s of ways to make chakli, here I am sharing my version of it.

Rice flour chakli


Ingredients list -

Rice flour - 1 kg ( slightly coarse )

Fried gram flour / putani powder - 400 grams
Hot oil - 1 cup + 1ltr for deep frying
Cumin seeds - 2 tbsp
White sesame seeds - 2tbsp
Hing / asafetida - half teaspoon
Salt
Water ( 4 cups or as required to form stiff dough)


Instructions -

Step 1 - take a relatively big bowl and add in rice flour, fried gram flour , cumin seeds, white sesame seeds , hing , salt and mix them all.


Step 2 - after mixing the dry ingredients , add in hot oil and mix it initially with any spatula.
Then use your hands and mix it really well.


Step 3- Just hold some flour in your fist and see if it holds the shapes, if not add in some more hot oil. Adding hot oil to the flours is the secret to crispy chaklis πŸ˜€.


step 4 - Now add water in batches to form a stiff chakli dough.


step 5 - once the dough is ready , fill them in greased chakli maker and make chakli shapes on a butter paper or any plastic sheet.


step 6 - Deep fry them in hot oil by flipping occasionally and in medium flame throughout.
once the chaklis turn lovely golden brown, take them out and enjoy .
