Foxtail millet upma/uppittu

Foxtail millets are the most grown millets in Asia , especially in India and China. It is most commonly used in China.

Foxtail millets are rich in vitamin B12 and has ample amount of protein in them.

As they are the excellent source of iron and calcium, it is good for your bones and muscles health.

It is good for cardiac health as well as they are low in carbs. Just like its other family members it has low glycemic index which is good for diabetes.

Text recipe - 

servings - 2 to 3 people
preparation time - 20 minutes ( except soaking part)
cooking time - 30 to 40 minutes

Ingredients


1 cup foxtail millet (200 grams approx) / ನವಣೆ 3 cups water / ನೀರು 1\2 onion / ಈರುಳ್ಳಿ 2 tomatoes / ಟೊಮ್ಯಾಟೋ 1\2 carrot / ಕ್ಯಾರೆಟ್ 15 green beans / ಹುರುಳಿಕಾಯಿ 100 grams green peas / ಬಟಾಣಿ 3 green chillies / ಹಸಿ ಮೆಣಸಿನಕಾಯಿ 1 dried red chilli / ಒಣ ಮೆಣಸಿನಕಾಯಿ Salt as required / ಉಪ್ಪು ರುಚಿಗೆ ತಕ್ಕಷ್ಟು 1 teaspoon mustard seeds / ಸಾಸಿವೆ 1 teaspoon urad dal / ಉದ್ದಿನ ಬೇಳೆ 1 teaspoon channa dal / ಕಡಲೆ ಬೇಳೆ Few curry leaves / ಕರಿಬೇವು 3 tablespoons cooking oil / ಅಡುಗೆ ಎಣ್ಣೆ

Instructions -


Step 1 - wash 1 cup of foxtail millet until water runs clean and soak it for 6 to 8 hours.

Step 2 - once the soaking is done, take a deep pan and add in oil to it. Once the oil heats up add in mustard seeds, chopped green chilies, red chili, urad dal, channa dal, curry leaves and Sauté until the dals turn brown.

Step 3 - Now add in chopped onions , other vegetables and sauté well.

Step 4 - Add chopped tomatoes once the vegetables are well cooked and sauté until they are soft.

Step 5 - add in 3 cups of water, salt and wait till it comes to boil.

Step 6 - add the soaked and drained foxtail millet to the boiling mixture and mix well.

Step 7 - close the lid and cook in medium flame for 15 minutes, keep stirring in between to avoid the food from sticking to the bottom of the pan.

Step 8 - once the millet is cooked completely ( you can add chopped coriander leaves and grated coconut to enhance the taste- optional), turn off the stove.

Step 9 - Leave the lid closed for at least 10 minutes before serving.

Note - you can add extra hot water in between if needed.
