Soaking millets for 6 to 8 hours before cooking reduces its anti nutrients . Anti nutrients is a sort of chemical which doesn't allow our digestive system to absorb all the nutrients which millets are offering us. π
So the soaking process reduces the anti nutrients which are present in almost all plant based food.
second reason is unlike other food grains millets doesn't have the fiber as a outer layer, but they are present in concentric circles inside the grain. so soaking converts the fiber in them into a form our body can easily digest.
Also soaking 6 to 8 hours makes the millets gut friendly , by being the right food for the microbes in our gut.
